Raised on the smoky ribs and beef brisket of barbecue joints in Houston and San Antonio, my brother Steve and I have always known what separates the 'real deal' from pretenders. We learned a lot about dry-rubbed, slow-smoked meats at those places. And we learned family recipes and our way around the kitchen from our father, who had quite the reputation for making people happy with great food and good times. So, years later after moving west to the Portland area we decided to introduce Oregon to the authentic Texas barbecue we loved and knew so well.

Texas barbecue goes back to German butchers who settled in Central Texas during the mid-1800s. They took a hint from Mexican vaqueros and emphasized beef, not pork in their barbecue. They hand-rubbed the meat with salt, pepper and spices and cooked it at a distance of three feet from the fire in pits filled with available hardwoods, including oak, hickory, pecan and mesquite. The taste was as distinctive as it was delicious.
